yes RussG, music-wise all the mentioned series have the best quality music background.
Rap (it's not really a hip hop I believe) is actually something that blends suprisingly well with the
Samurai Champloo drawing style and characters.
Blues and Jazz are the main themes for
Cowboy Bebop, some of the songs became my best songs I ever heard. Ghost in the Shell has also wonderful music background. There is this famous musician working for anime series,
Yoko Kanno, she composed music for both, GITS and Cowboy Bebop. She is a really talented woman. If you pay attention to the music as well, you can download OST from the series one day and check them yourself.

As I see, many people are addicted to the
Naruto series. I must say I like to watch it too, same goes for
One Piece (which I like even more than Naruto) and
Bleach, but it's like this never ending story with pure action. The dialogues are usually silly, the fillers can annoy hell out of you... yet, you still keep watching it. Sometimes it amazes me, why the hell I still bother.
I've seen pretty much most of the animes available, which aren't meant for girls only. Love and romance anime make me throw up, so I turn them off right away. I kinda hate when the anime is in this standard enviroment, school, students bla bla bla. Teenage kid saving the world, sigh.
That is why I like a lot the series which aren't like that. Besides the ones mentioned above, I also loved
Hellsing, which was mentioned by some people already. It's really great one, esepecially if somebody who always liked the stories with vampirellas.
Eden of the East, quite a new anime - also mentioned by Flaw, it had the most wonderful opening song and visualisation I've ever seen. The storyline is short but also worth to check it out.
I could comment on almost each anime mentined here, but not so many are really worth it. However!

And of course Neon Genesis Evangelion, which is probably the most known anime (...)Why was it so good in your opinion? Why is it so well known? I can't understand it. Besides some psychological issues, which aren't really that amazing, there was nothing that exciting in this anime. It left me out with the bad aftertaste when I finished the series. "That's it?" - I was thinking. "No way, people said it's so so soooo good. Where all this goodness hid?" - I was whining. So maybe you, or anyone else, could give me a hint, what I missed? Because I can't understand this particular fenomenum at all. Why people call it "The best anime of all time".
